About 30 people gathered in the back dining room of Editson Park Steakhouse in Farragut to sample the new selection of “natural” steaks being offered by owner Randy Burleson Thursday, March 16. Mel Coleman and Kay Cornelius of Coleman Natural Foods in Golden, Colo., were on hand to explain the “natural” methold of raising beef, lamb and chicken. Cornelius said the “natural” process produced more marbling in beef than conventional methods of raising cattle. “Marbling is affected by growth hormones,” she said, adding that naturally-produced beef develops more fat. “Fat is flavor, it’s juicier and tastier.” Coleman said the cattle the company produces are entirely grass fed and are fed grain the last 120 days before going to market.
