Blue Coast Burrito offers healthy fare for customers


Kevin Lee knows all about being a company man.

Lee, a graduate of The University of Tennessee, spent several years as a member of the corporate world before opening Blue Coast Burrito at 11124 in Farragut.


“I spent several years in the Dollar General corporate office before I figured out that wasn’t for me,” he said. “I worked in the Nashville office.”

Lee’s wife, Erin, was a school teacher in Nashville. He said she became acquainted with a couple that would eventually change their life.

“They owned a restaurant franchise and introduced us to the idea of Blue Coast Burrito,” Lee said.

He said when he left the corporate world in Nashville, he and Erin bought into the Blue Coast franchise and decided Knoxville would be a viable location. Once in Knoxville, Lee looked at traffic patterns and other factors to determine the optimal sites for such a business. He chose Farragut.

“There was a lot of congestion in the Bearden area with the Papermill Drive construction, but we liked the area,” Lee said. “We decided Farragut would be a better place to locate the

business.”

Expansion into Bearden, he said, would be a possibility in the future.

Blue Coast Burrito is a fast-food/casual atmosphere eatery offering 2,800 square feet of space for dining. Delicious smells assail customers once they open the door to the business smells of fresh salsa, fish, guacamole and a variety of other delectable delights designed to tantalize the taste buds. Blue Coast Burrito features California-style burritos, fish tacos, tacos and salads. All salsas and salad dressings are made from scratch. The freshness of the salsas, Lee said, is a source of pride.

“All the food is based on California food,” Lee said. “There’s a place in California called Rubios that claims to have the best fish tacos in the state. The Blue Coast Burrito owners picked up on that idea and improved it. We’re known for our fish tacos.”

The meals are designed for the health-conscious customer.

“The company has dieticians that design our food so the meals provide healthy nourishment,” Lee said.

Lee said what he enjoyed most about owning his own business was the ability to meet and greet the customers.

“I like building the relationships with people,” he said. “I want people to feel at home when they come here. Atmosphere is what makes us different from other places.”
