Burger Shoppe opens

Rocky Top Burger Shoppe has taken up residence off Parkside Drive in the former Gridiron Burger location.

Though unaffiliated with Gridiron, owner Tammy Dolak said she and husband, Gregg, took pains to make the menu appealing to Gridiron fans.

“We tried to keep the menu similar, but they’re all our own recipes. We just wanted to keep it similar for the people who loved Gridiron before, but we’ve expanded the menu as well,” Dolak said.

The expanded menu will include items from the Dolaks’ past residences, Colorado and Arizona.

“We brought with us an S-O-B. It’s “Sausage On a Bun,” an Italian sausage sandwich,” Dolak said, not to be confused with a breakfast or link sausage.

“It’s actually a patted-out Italian sausage, and it’s caramelized on both sides on the flat top,” she added.

“We actually brought green chili with us … we’ve added green chili to our menu that comes with warm cheese and tortillas.

“Both of those seem to have been a hit so far,” Dolak said.

In addition, Rocky Top has its own “Rocky sauce,” as well as fresh-cut fries, veggie and turkey burgers and chicken and hamburger recipes.

Rocky Top’s main dining room seats 100; the patio seats about 30. In addition, the restaurant has a private side dining room that seats about 14.

Dolak described the environment as family-friendly and fun, adding it was much more spacious than a typical burger restaurant.

“We have the T-Vs, so definitely we want to invite the sports fans, but then we have a side room … and people come for meetings there from local businesses.

“It’s just kind of a nice, calm, not too wild [place] … you can watch the games, but you don’t feel so hectic and so crowded,” Dolak said.

The Dolaks joined former Gridiron manager Patrick Leonard when they opened Rocky Top, named for the iconic Tennessee Volunteers sports anthem.

“Every time we visited [Knoxville], we noticed how friendly Knoxville was. The people are just really friendly, and it just seemed like a really nice place to live,” Dolak said.

“It’s been fun. We’ve had nothing but great reviews,” she added.

Rocky Top held its grand-opening Monday, June 29. The restaurant is open from 11 a.m. to 9 p.m., Sunday through Thursday and from 11 a.m. to 10 p.m., Friday and Saturday.
