Shrimp Dock launches ‘Gator Week’


Volunteers fans wanting to branch out from typical tailgating foods, or perhaps hoping for a little self-fulfilling prophecy, can pick up alligator po’ boys from The Shrimp Dock in Farragut this week.

“It’s Gator Week at The Shrimp Dock ... right up until the kick-off of the game, all week long,” owner Phil Dangel said.

UT plays Florida in Gainesville at 3:30 p.m., Saturday, Sept. 17.

“We have fresh gator meat, fresh gator sausage. And we’re giving away a small cup of gator gumbo with every gator po’ boy that you order,” Dangel said.

Two gator po’ boys are $12.99.

Dangel said the gator meat comes from Florida.

“It’s an annual Gator Week event. You can fry gator; you can bake it,” Dangel said.


And courtesy The Shrimp Dock, a gator gumbo recipe:

In a pot or pan, for the roux, mix together:

• 1 cup vegetable oil

• 1 cup all purpose flour

Then add:

• 2 cups chopped onions

• 1 cup chopped bell pepper

• 1 cup chpped celery

Cook for 10 minutes, adding water as needed. Next, add:

• 2 lbs gator meat cut into 1" pieces

• tablespoon of basil

• tablespoon of thyme

• salt and pepper to taste

Cook for 15 minutes, adding water as needed to stop from sticking. Add enough water to cover, then cook 30 minutes. Finally, add 1 lb chpped okra

Cook another 30 minutes and serve over rice.
